How it works: Fat bloom occurs when liquid fats migrate to the surface of chocolate and recrystallize into white, powdery crystals. Sorbitan Tri Stearate acts as a crystal modifier, retarding polymorphic transitions. Together with premium Cocoa Butter Substitute (CBS), they lock fats in a stable crystal form, keeping compound chocolates glossy and appetizing.
