Confectionery Processing

Gloss & Snap

Ensure a glossy chocolate finish, clean mold release and a satisfying snap in compound bars.

Bloom Prevention

Prevent fat crystallization and white bloom to preserve appearance and shelf life under climate stress.

Flow Control

Fine-tune chocolate viscosity and yield stress for clean enrobing, filling and molding.

Cocoa Butter Replacement

Recommended Solutions: Sorbitan Tri Stearate & CBS

How it works: Fat bloom occurs when liquid fats migrate to the surface of chocolate and recrystallize into white, powdery crystals. Sorbitan Tri Stearate acts as a crystal modifier, retarding polymorphic transitions. Together with premium Cocoa Butter Substitute (CBS), they lock fats in a stable crystal form, keeping compound chocolates glossy and appetizing.

Recommended Solutions: PGPR & Lecithin

How it works: High chocolate viscosity causes thick coatings, air bubbles and molding issues. Lecithin reduces overall viscosity by wrapping sugar/cocoa particles, while PGPR (Poly Glycerol Poly Ricinoleate) specifically eliminates yield stress, letting chocolate flow smoothly into fine details and thin layers.

Recommended Solutions: DMG & GMS

How it works: In caramels, chewing gums and soft confectionery, stickiness leads to packaging issues and poor chewiness. DMG and GMS act as release agents and texture conditioners. They emulsify lipids evenly, prevent free fat migration and yield a clean bite that doesn't stick to teeth or wrappers.

Recommended Solution: Cocoa Butter Substitute (CBS)

How it works: Cocoa butter is highly volatile in pricing and demands rigorous tempering. Our lauric-type Cocoa Butter Substitute (CBS) requires no complex tempering, crystallizes rapidly and yields a compound chocolate with high thermal stability, great snap and excellent melting profile resembling genuine cocoa butter.

Applications Across Confectionery

Our specialty ingredients deliver peak performance across a wide spectrum of sweet applications.

Compound Chocolates

Formulate compound blocks, slabs and coating drops with high heat resistance, premium snap and excellent gloss.

Enrobed Biscuits & Wafers

Ensure consistent, bubble-free chocolate coating thicknesses on baked crackers, cream wafers and cookies.

Soft Caramels & Toffees

Achieve a highly stable fat emulsion to prevent oil exudation, control chewiness and ensure wrapper-release.

Chocolate Chips & Inclusions

Formulate bake-stable dark and milk chocolate chips that retain their structure and creaminess during baking cycles.

Fillings & Spreads

Ensure zero oil separation and a luxurious, smooth mouthfeel in cocoa fillings, praline pastes and biscuit creams.

Chewing Gums

Plastify the gum base, improve flavor release speed and ensure non-sticky chewing profiles.
